The mold of Mephistopheles that was featured in the July issue has been utilized to make a plain chocolate version and a chocolate version with gold and red cocoa-butters (pictured)—with some assistance in airbrushing from one of the chefs (a gold-medal winner of the Young Chef competition in the US) at Mr. Gutman’s hotel.

A cast was also made from resin & plaster, with a small magnet embedded at the back.

If these seem too complex to follow, then the following simpler fruit creations may encourage others to follow in Mr. Gutman’s footsteps:

Here is the latest creation from Mr. Gutman: What appears to be Mephistopheles, a demon featured in German folklore and originally appearing in literature as the demon in the Faust legend.

This is the original sculpture.

And this is the casting from it in stone—really a casting mix called “drystone,” the benefit of which is that it retains its white color, whereas other mixes come out greyish.

Next on the agenda is casting in chocolate for guests.

and an expressive clay statue.

If art is the quality of communication, and that is as good a definition as any, then these communications certainly qualify, adding value to the guest experience.

If you are inspired, remember that Mr. Gutman has had no training at all on any of these subjects—just what his own interest, research, native skills, and desire-to-please have opened up to him.
