With the very welcome increased interest of late in butlers by the media and amongst the newly wealthy in various countries, my wish is that those who help deliver on the promise in the year ahead, focus on communicating the standards inherent in our profession, and avoid the ever-present effort to deliver abbreviated versions in response to clients applying their usual modus operandi of “getting a good deal” simply because they do not yet understand the true nature of butling and so end up “buying themselves short.” Maintaining our standards, if I might state the obvious, is a win-win for everyone, and I’d like to see everyone winning as we move into a new year full of hope.

Butlers in the Media

Aljazeera carries an article on how graduates fresh out of butler school are being used to train prospective butlers in China, where private service butlers can expect to make 20K a year for very long hours. European butlers are in demand as status symbols but do not stay long because of the working conditions and cultural differences, and a lack of ability to do their jobs properly in the absence of the Chinese language skills necessary to manage the rest of the staff.

The BBC, on the other hand, reported that China and Russia are both experiencing a demand by their wealthy for British butlers commanding $150,000 and up. The demand in China is being met in part by six new training schools, which have been opened in China by a British recruitment agency.

CNN reports on the publication of a survey of over 2,000 domestic workers in the US—mostly immigrants and holding lower positions—who work long hours for less than minimum wage, etc.  Apparently, “The Fair Labor Standards Act, which guarantees minimum wage, overtime and sick- and vacation pay, does not apply to domestic workers.” Butlers and household managers are rarely treated in this way, but one would hope that in the households they supervise, the staff are not so treated. As reported in multiple media, the Pope pardoned his ex-butler after he mis-used his position of trust to steal documents and leak privileged information. He was banished from the Vatican, but is receiving assistance to find a new position and house, and to start his life anew. “This is a paternal gesture toward someone with whom the Pope for many years shared his daily life,” according to the Vatican Secretariat of State.

According to the book Plutocrats: The Rise of the Super Rich and the Fall of Everyone Else, the top 10% of American households in terms of household income makes $150,000 and up—butlers themselves in many cases qualify for this category.

750,000 Americans are in the top 1%, having a household income of just under half a million dollars: such households cannot generally afford to employ a butler or household manager—but can afford housemen and other household staff. 70% of these families made their money in the past decade, almost half of them being entrepreneurs—meaning that the background of seven-in-ten rich households is not one of wealth and luxury, and therefore their exposure to butlers–and the lifestyle they make possible–has been mainly through the media and word of mouth. So this is not an optimal market for our profession.

Around 150,000 Americans have a household income of $4 million and over, and so are more likely to be able to afford to hire a butler.

Congratulations

Congratulations to General Manager, Mr. Iain McCormack, and the staff of Gili Lankanfushi in the Maldives, who were just declared the winner at the World’s Leading Luxury Resort and World’s Leading Villa Resort & Spa at the World Travel Awards Grand Final 2012. Their Mr. Fridays (butlers) were trained extensively by the Institute during October 2011.

A Creative Idea for Turndown 

Whether in a private estate or luxury resort, turndown amenities are a small way the butler can add to the guest (and employer) experience. Hats off to Mr. Kobi Gutman for a new twist that is bringing about many happy guests at the private Fort Harrison hotel in Florida, where he services the top suites. He actually carves these himself, not based on any earlier training or skills, but learning as he goes. Most simply utilize a red apple, and are tailor made either to the calendar (such as Halloween or July 4) or more often, to the individual receiving the amenity (like a Ferrari enthusiast). Maintaining a Humidor

When talking about maintaining a humidor, the two most important things to discuss are temperature and humidity. One sees the term Relative Humidity (RH) used quite commonly, though many people do not understand what the term means.

‘Relative’ and the fact that RH is expressed as a percentage, indicates a ratio. In simple terms, it is the amount of water vapour in a volume of air expressed as a percentage of the maximum amount of water vapour that volume of air could hold at that temperature. How much this maximum is depends on the temperature; so RH is a function of both moisture content and temperature. By itself, RH does not indicate the actual moisture content in the air, since saturation point occurs at different temperatures.

Some cigar enthusiasts scoff at the need to concern themselves with the temperature. Unless you store your cigars in a temperature-controlled environment or live in a very mild climate, I believe the temperature must be taken into account. This is because a given amount of water vapour, in a given volume of air, will have a differing RH% depending on the temperature.

The ideal environment in which to store cigars is a relative humidity of 70% at 70◦F (21.1◦C). 

The below table will show that as the temperature rises, the humidity must fall. Conversely, as the temperature drops, the humidity must rise. Care must be taken not to deviate too far from the ideal, otherwise you will end up with soggy cigars or cigars which will which have lost their aromatic oils.

Reviving Dry Cigars

Don’t! It is that simple. When a cigar loses moisture, it is losing aromatic oils into a dry humidor. When the humidor is opened, these oils are lost into the atmosphere. This should not happen in a well-maintained humidor that is checked daily. Dry cigars will have lost flavour and are harsh to smoke. Re-humidifying cigars means replacing the lost aromatic oils with water. The result is always a loss of flavour and aroma.

You may research how to re-humidify cigars if you are ever given any and want to rescue them for your own consumption, but hotels that sell re-humidified cigars to guests are ripping them off. Nor should a butler serving in a private estate offer such cigars to the principal’s guests—experienced smokers will know that what you have given them is sub-standard.

Recent Graduates

Mr. Raoul Gonzales trains butlers on the Norwegian Cruise Line Vessel Dawn. He is one of the Norwegian Cruise Line’s butlers who was trained last year by the Institute to then train his fellow butlers on the hard skills of butling on a cruise ship. Here Mr. Gonzales is shown taking them through their paces on synchronized service.

Once NCL has completed the training evolution, they will offer more services throughout their fleet for their high-end guests, than any other cruise line.

How I Learned to Speak Up

When is the tall one going to talk?” This is what actress Olympia Dukakis used to ask other staff members at the Whole Theatre where I was the Public Relations Director before I became her Personal Assistant. I was 29 years old, it was 1986, and Olympia was my employer and mentor. We then went on to work together for 25 years.

In private service, we know that communication issues can make or break us—to learn to confront people and situations positively is a skill that builds leaders in our profession. Employers also have a fear of speaking up and there are ways that we can help them—silence is not (always) the answer.

I had so many reasons for not speaking my mind. I think these are the same reasons why many private service professionals don’t say what they know should be said and there is much suffering in silence. It’s the fear factor. The fear factor cannot be underestimated when it comes to the problem of staffers speaking up to anyone, but especially to colleagues and employers. I understand what it feels like to be mute in the face of a situation that needs to be confronted.

The fear was about appearing stupid, ill-informed, or unprepared, even though I was none of those things. There was fear of being wrong, making a mistake, and losing my job. The fear had to do with the possible reactions of fellow staffers such as: “What are you trying to pull? Are you trying to make me look bad? Are you angling for my job? Do you think you’re smarter than me? Do you think you’re better than me?”

My lack of confidence was known to me and now, Olympia, my employer, saw it in high-def and I didn’t like it. I threw myself into my job and worked hard to do it well. I took the risk to give her my opinions, and she valued what I had to say. I began finding my voice. What helped the most though was having Olympia Dukakis as a role model.

Here’s an example of what I mean. The theater director and I had already been coordinating press interviews for several weeks, all of which had progressed without any problems. Then, in front of the entire staff, he called me a “liar” and the room instantly became quiet. I was horrified at the injustice and the public humiliation. Olympia said to the director, “You must be mistaken. I know that would never happen with Bonnie. Let’s talk about this later.” And we did deal with it later. The director was a serial bully who enjoyed the power trip. The thing about bullies is that they are threatening and powerful until directly confronted. Then they shrink away and unfortunately, choose someone else to bully. Try it. Look a person straight in the eye and firmly say, “I won’t be spoken to that way” and mean it. Watch what happens.

Olympia stood up for me. She spoke up and plainly stated what needed to be said. Another time I recounted a contentious conversation I had on her behalf, and Olympia’s outraged reaction was, “You will not be spoken to like that. Don’t take it from her.” And I didn’t.

Finding my voice had everything to do with witnessing role models use theirs. Finding the words that work for you in challenging situations will work magic for your career.

I learned from Olympia that it is important to speak up and say the hard things in a way that people can hear. Time and again I witnessed the relief in the room when Olympia said the thing that everyone was thinking but no one wanted to say. In most cases, I witnessed how speaking up makes things better and the elephant in the room disappears.

Now I say the hard things, too. The trick is to not wait until little problems escalate into a big one. I would be lying if I said I am now totally comfortable speaking up, but I do it and I have become much better at it. I encourage my students to do it, too, and they excitedly tell me of the positive results. Practice definitely makes it easier.

For instance, when the producer became emotional and verbally abusive to me on the phone and I tried to speak, he cut me off.  After several attempts, I calmly and firmly said, “If you will let me speak without interrupting me, I can help solve this problem. If not, I’m hanging up.” He stopped talking and we did our work.

Speaking up builds self-confidence, self-esteem, self-respect, and respect from others.

It feels like a risk. Do it anyway. I have found my voice. I learned the hard way that suffering in silence makes things worse, not better and only prolongs the inevitable in both work and in life. Life is too short.

New Zealand Wines

Today we fly to New Zealand in the Southern Pacific Ocean to appreciate some of the world’s newest and finest wines. New Zealand is one of the few southern hemisphere countries to produce fine wines. Compared to its northern counterparts, New Zealand shares the same latitude degrees as France and Spain, which may give an idea of the sort of favorable climate for their vineyards. Many varietals (mostly imported) benefit from the maritime climate, with long sunshine hours and sea-breeze-cooled nights.

Wine history in New Zealand began after a fashion two centuries ago when British residents devoted some time to developing drinks much consumed in their home country—their favoring of beer and other spirits, however, delayed the real blossoming of wine making until the late 1960s, when a series of historic changes ultimately led to the planting of vines in lands that had been qualified previously as marginal pasture.

New Zealand produces unique white wines, 50% being Sauvignon Blancs, as well as Chardonnays and Rieslings. These wines are notable for their purity, vibrancy and intensity: The fruit undergoing a long ripening as a result of cool temperatures, which allows flavors to develop while retaining a fresh acidity. There are 10 major wine growing regions, the most important being Marlborough and Hawke’s Bay.

New Zealand’s most grown red varietal is Pinot Noir, with Merlot and Cabernet Sauvignon also being important. Lately, Shiraz/Syrah is also being grown on previously cultivated land.

The country’s Sauvignon Blanc is widely recognized for its pungent and intense taste and its crisp acidity, which makes it easy to match with raw vegetables and salads. The Chardonnays offer a concentrated citrus and tropical fruit flavor combined with some refined minerals—and since they can yield all sort of body, they can be paired with a wide range of food, from fish and other seafood dishes such as shellfish, to poultry and citrus or vinaigrette dressed salads.

As for the reds, they are mostly full-bodied, which helps enhance medium-to-strong flavored cheeses, game and red meats.

Last, but not least, there is an excellent production of high-quality sparkling wines, following the Méthode Traditionelle (traditional method used to make Champagne).

I raise my sparkling Pelorus to this wonderful New Year that promises to be as excellent as my drink!

Нам удалось избежать встречи с Ураганом  Ирина  (Hurricane Irene)  во время круиза.

Спасибо всем, кто подписался на журнал и всем, кто прислал поздравления в связи с выпуском журнала в новом формате.

Недавно я присутствовал на конференции, посвященной социальным средствам, и хочу сказать, что существует целый мир для исследований: новый веб сайт и новый формат – это только начало.

Помимо приглашения принять участие в диалоге в блогах (свяжитесь с редактором theeditor, чтобы получить статус «автора»), я хочу выделить отдельно новое направление forum (на который можно попасть, нажав красную кнопку вверху на домашней странице). Раньше у нас все было в одной «куче», которая со временем разрослась, не имея определенной формы и в которой сложно было разобраться. Новый Форум имеет пять разных категорий и 28 подкатегорий, поэтому вы легко сможете найти тему для дискуссии, в которой захотите принять участие.

Мы оставили все старые темы, оставили также все комментарии, поэтому вы найдете там необходимые источники информации. Но что наиболее важно, вы сможете начать диалог, или найти ответы на интересующие вас вопросы, или же ответить на них, либо просто оставить свой комментарий. Ассоциация содействия ООН намерена остановить тяжелые условия работы для домашнего персонала (UNSeekingtoFixSlaveryConditionsforDomesticWorkers).  В мире зарегистрировано 100 миллионов домашних служащих, и большинству из них не о чем написать домой, в добавление к чеку, который они посылают, чтобы поддержать свои семьи.

Для начала решения проблемы, делегаты Международной Организации труда Объединенных Наций (представляющие союзы, работодателей и правительство), проголосовали 396 голосов против 16 за необязательное Соглашение для Домашних служащих, в котором изложено, как должны относиться к домашнему персоналу в странах, членах Объединенных Наций.

В то время, как мы избалованы на Западе, и особенно, в среде дворецких (мы не говорим о преступлениях сексуального характера, или других оскорблений, ошибочное заключение в тюрьму, и рабство; половина домашнего персонала в мире не имеют даже одного выходного дня), в США также появились статьи, в которых речь идет об отсутствии уважения к людям.

Ассоциация содействия ООН не могут обязывать к этому, но, по крайней мере, можно создать для работодателей рамки, которых следует придерживаться, и большую компенсацию для работников, вместе все это приведет к лучшему рабочему климату для домашнего персонала во всем мире.

Еще одна попытка роботизировать дворецкого (AnotherEffortatRobotButlers)

Это, конечно же, интересно и дерзко, разработать план по созданию дома, где робот сможет подавать чай. Уместный вопрос: Захотят ли работодатели жить в таком доме? Предпочтут ли они обслуживание роботом, нежели живым человеком?

Будет ли Биф Велингтон, приготовленный роботом, лучше на вкус, чем приготовленный поваром? Без сомнения, у роботов есть и свои недостатки, и определенные преимущества, но кто кроме других роботов предпочтет их к себе в компанию?

Мы получили письмо от нашего постоянного читателя, который находился в зоне действия Урагана Ирина как раз перед тем, как он разразился: «Что касается подготовки к  чрезвычайной ситуации, все, что мне нужно было сделать – это обратиться к домашней библии, книге Дворецкие и Управляющие. Это, в самом деле, единственная книга в мире, которая может вам пригодиться! Отличная работа. Я никогда не расстаюсь с ней теперь» (Н.Г.)

Новые возможности для личного помощника

Не у всех есть качества, которые необходимы, чтобы быть Личным помощником, но если вы ответили «да» более чем на три из следующих вопроса, возможно, вы уже владеете врожденными качествами успешного Личного помощника.

На личном помощнике лежит большая ответственность, и он является связующим звеном между шефом и всеми его контактами. Он, или она должны уметь противостоять любой сложной ситуации, и делать это спокойно, точно, обоснованно, и с позитивным отношением.

Поскольку все больше и больше занятых знаменитостей и руководителей желают более упорядоченного подхода к своей жизни, высокооплачиваемые позиции для умелых, симпатичных и точных личных помощников невероятно возросли на рынке труда в 2011 году.

Может быть, в мире существует не так много разновидностей вешалок, как разновидностей вина или сыра, но, тем не менее, есть широкий выбор, который вы можете использовать в своем собственном, или чьем-то гардеробе. Надеюсь, следующие несколько строк прольют свет на этот малоизученный предмет, особенно для тех дворецких, которые только начинают свою карьеру.

Для тех, кто попал сюда недавно по пути в другую сторону галактики, объясним, что вешалки – это устройство, по форме напоминающее человеческие плечи, с крюком, что позволяет вешалкам подвешивать одежду в воздухе, таким образом, чтобы они висела так, как будто одета на человека.

Иногда, форма, напоминающая человеческие плечи игнорируется и вместо этого вешалка имеет горизонтальную перекладину для подвешивания брюк, или изящную полоску с клипсами для подвешивания юбок или брюк, или зажимное устройство, которое может быть использовано, чтобы держать юбку или брюки вместо клипс. Самые лучшие вешалки это те, которые сочетают в себе форму плеч с горизонтальной перекладиной, клипсами или зажимным устройством, позволяя использовать одну вешалку для костюма, состоящего из пиджака и брюк. Другие типы вешалок могут быть предназначены для вывешивания множества галстуков, шарфов, ремней, или фуляров*.

Несмотря на типы вешалок, цель остается той же самой: приспособить подвешивающее устройство для того, чтобы предотвратить складки.

Как правило, вешалки сделаны их металла, дерева, или пластика. В нашу эру всего «органического», мы наблюдаем рождение вешалки для одежды, сделанной, к примеру, из бамбука.

Как заварить превосходную чашку чая

Теперь, когда у нас есть все необходимое оборудование, давайте посмотрим, как правильно заваривать Цейлонский чай. Ниже последует описание общепринятого метода  заваривания Классического Черного чая (так, как предпочитают в Великобритании), его правильного заваривания, я могу это подтвердить после посещения чайных фабрик в Шри-Ланке.

Эти правила не относятся ко всем видам чая, или отварам. Для чая Оолонг, зеленого чая и некоторых черных китайских чаев берут более прохладную воду. В прекрасной книге Джейн Петтигрю Справочник для знатоков чая есть полный температурный перечень для заваривания разных видов чая.

 

Метод заваривания чая

Начните с того, что нагрейте два заварочных чайника – наполните их горячей водой, или поместите в нежаркий духовой шкаф. Вам также понадобится следующее:

ЛИМОН  Не используйте зубочистки, когда подаете кусочки лимона – этот новый тренд, который я наблюдал в гостинице – одно из моих личных больных мест. Пожалуйста, подавайте лимон с маленькими вилками для коктейля или щипцами.

МОЛОКО Не подавайте сливки с чаем – они перебивают вкус чая и должны подаваться только с кофе.

САХАР Белый сахар, предпочтительно кусковой, подавайте с щипцами. Предложите в качестве альтернативы мед.

Эксперты утверждают, что сахар портит вкус чая, и, может, стоит отказаться от сахара, если вы наслаждаетесь одним из прекраснейших видов чая, доступных сегодня. Помните, что чай относится к здоровым напиткам и мало смысла в том, чтобы превозносить  достоинства напитка, если вы употребляете его с очищенными углеводами!

КАЧЕСТВО ВОДЫ Хороший чай нуждается в свежей воде, доведенной до кипения как можно быстрее. Вода, поддерживаемая теплой в электрическом самоваре, или налитая из бойлера кофемашины, –  не говоря уже о горячей воде из-под крана, – никогда не должны использоваться для заваривания чая. У такой воды низкий уровень кислорода, а растворенные соли и минералы будут в результате испарения концентрированными.

 

Перед тем как наполнить чайник, пропустите воду через фильтр. Используйте ключевую воду, когда завариваете душистый, или очень дорогой чай. Мы проводили эксперимент и обнаружили существенную разницу во вкусе прекрасного чая Darjeeling, заваренного на воде Evian, в отличие от контрольного чайника с водой из-под крана.

Чай, заваренный мягкой водой, или постоянно жесткой водой (CaSo4) получается ярким, чистым настоем, тогда как чай, приготовленный из временно жесткой воды (CaSo3) получается тусклым и слабым настоем, который быстро образует слой пены сверху.

Эффект может быть уменьшен за счет добавления сахара, хотя не рекомендуется пить чай с сахаром. Молоко увеличивает количество пены на поверхности, хотя обезжиренное молоко производит примерно вполовину больше пены, по сравнению с молоком обычной жирности. Лучшим решением тогда будет пропустить временно жесткую воду через фильтр до того, как наливать ее в чайник.

ЧАЙ Храните ваш чай в прохладном, сухом месте и кладите его в подогретый чайник перед тем, как вода закипит. Положите одну чайную ложку с горкой на каждую чашку и «одну ложку на чайник». Это даст более настой чая и позволит вам угостить каждого гостя чаем по его или ее вкусу.

ЗАВАРИВАНИЕ ЧАЯ Залейте кипящей водой листья чая и выдерживайте нужное количество времени. Общая ошибка в том, чтобы заваривать чай дольше, для получения более крепкой заварки. Это неправильно, и результатом будет «вареный (горький) чай». Добавьте больше чая и заваривайте его столько времени, сколько указано на упаковке, не дольше.

Поскольку цвет появляется раньше вкуса, по цвету заварки нельзя сказать о чае много. Хорошие производители чая меняют время, необходимое для заваривания чая от одной партии к другой, поэтому смотрите на инструкцию каждый раз, когда вы открываете новую упаковку. Перемешайте чай дважды во время заваривания, один раз для того, чтобы ощутить его аромат.

Перелейте чай через фильтр во второй подогретый чайник. Ополосните первый чайник и наполните его снова кипящей водой. Выносите оба чайника для того, чтобы те гости, которые не любят крепкий чай, могли разбавить свой чай кипятком.

Плотный ужин с чаем – возможно, одно из наиболее нераспространенных и недопонимаемых понятий в гостиничной индустрии на сегодняшний день. В следующем месяце мы разберем разницу между понятиями high tea и low tea, и дадим вам несколько советов по приготовлению незабываемого полуденного чая.

Извините, мы пытаемся сделать выпуски короче, но так много тем, которые хочется обсудить! Надеемся, вам понравится этот выпуск.

В новостях я прочитал несчастливую историю, произошедшую в результате урагана Ирина с г-м Батлером (Butler – дворецкий) из Тукседо в Нью-Йорке. Какие истории могут рассказать нам фамилии людей! Нам будет не сложно предположить, как г-н Батлер получил свою фамилию. В Соединенных Штатах только девяносто фамилий, которые более популярны, чем фамилия Батлер, что делает эту фамилию достаточно распространенной, несмотря на небольшое количество дворецких, существовавших там в действительности.

«Смит» фамилия № 1 в США по частоте употребления, возможно потому, что раньше на каждом углу можно было встретить кузнеца (smith – кузнец) – также как сейчас гаражи / автозаправки, или аптеки. Может, через сотню лет, «Драг» (drug – лекарство), или «Газ» (gas – газ) будут фамилиями № 1!

Но что меня действительно заинтересовало, так это то, как в городе Тукседо оказалась такая фамилия. Не Тукседо Джанкшн, а Тукседо, место, которое сто лет назад было одним из наиболее популярных летних убежищ для общества Нью-Йорка. Там был и есть до сих пор шимпанзе центр, тот самый о котором говорили, что его питомцы показываются в Сити Холл в смокинге и размахивая бамбуковой тростью. Показы собак, выставки лошадей, балы, это место со своей историей, ни одна из которых  не является выдуманной.

Что касается Тукседо, то не город был назван в честь предмета одежды (Tuxedo – смокинг), а предмет одежды в честь города! В 1860 году, британцы начали носить менее формальную одежду на неофициальные события страны, предпочитая жакеты, сделанные из такого же материала, что и официальные фраки. Принц Уэльский пригласил одного миллионера из Нью-Йорка, Джеймса Поттера, в свою охотничью усадьбу Норфолк и порекомендовал своего портного Савиль Роу.

Г-н Поттер приехал в Лондон на примерку и привез с собой домой в Тукседо, обеденный костюм, и показался в нем в  Парк Клубе, недавно образованном кантри клубе для элиты Нью-Йорка. Вскоре жакет стал очень популярным, и распространился гораздо шире в общество Нью-Йорка. Так, когда члены клуба обедали в Сити, то все, кто их видел, стали ассоциировать жакет с принадлежностью к клубу.

Но никто не скажет нам, откуда пришло название «Тукседо»; только то, что оно было заимствовано для описания предмета одежды, который, без сомнения, каждый дворецкий имеет в своем гардеробе.

Чтобы узнать это, давайте обратимся к Исходному Американскому языку, где, возможно, из-за того, что Алгонкианский (Algonquian) язык не был представлен в письменном виде, мы нашли три возможных происхождения: Племя Волков жило в той местности Нью-Йорка и их противники называли их «туксит», что означало « круглая лапа».

Согласно второй версии, «п’туксит», относится к Алгонкианскому слову, обозначающему «волк» (животное, с круглым отпечатком ноги). И третья, более прозаическая возможность, относится к географической области, «п’тук-сепо», что означает «изгиб реки». Тукседо потерпел поражение к 1922 году из-за тенденции укорачивания слов для быстроты произношения, что дало нам «Тукс».

Мы только что закончили первую часть начальной фазы тренинга для круизного лайнера на Багамах и Бермудах. Франк взял отпуск (на своем супер тренинге для экономически ограниченной молодежи в Южной Африке) с тем, чтобы продолжить работу на Сейшелах; Амер занимается обучением дворецких в Марокко; Стивен опять на Мальдивах, работает над захватывающим проектом в цепи отелей класса люкс на Мальдивах.

Новости денежного обращения Мирового Банка и других банков, в то время как они пытаются предотвратить взрыв Европейской и Американской экономики и экономической системы, которую они достаточно экстравагантно создали, вышли параллельно с несколькими статьями в других изданиях, о влиянии настоящей экономической политики, как на бедных, так и на богатых.

Ко всему вышесказанному мы можем добавить статью, озаглавленную «Советы экономиста для безработных: становитесь дворецкими»  (EconomistsAdvicefortheUnemployed: BecomeaButler ).  «По мнению The Economist, богачи планеты имеют тонны денег, но слишком мало времени, чтобы ими насладиться». Ссылаясь на веб сайт Клива МакГонигал Butler Bureau, в статье говорится, что всех, окончивших школу дворецких ждут высокие зарплаты и что «Как только вы закончили свое обучение и улучшили свой Британский акцент, агентство по подбору домашнего персонала может помочь вам найти дом, поскольку мировая элита не затрудняет себя электронной доской объявлений Craigslist…  Закончим ли все мы в качестве слуг на плантации богача?»

Читать интересно, но, к сожалению, такое сложно найти.

Конечно, все еще предлагаются вакансии для квалифицированных специалистов, например TheQueenofEnglands ищет помощника дворецкого – оплата 15 000 фунтов в год, плюс бесплатное проживание. Королеве требуется некто, «дружелюбный, вежливый и с покладистым характером, кто способен быть благоразумным и соблюдать конфиденциальность… увлеченный и преданный человек, работающий в настоящее время в сфере кейтеринга и гостеприимства, но желающий сменить сферу деятельности».

В описании обязанностей говорится: «Эта уникальная и профессиональная роль обеспечивает развитие и рост карьерных возможностей для тех, кто захочет работать в Королевской резиденции в Великобритании, где вы будете выполнять широкий круг обязанностей от отправки сообщений и обязанностей слуги, заканчивая службой питания и напитков». Обязанности включают в себя «приготовление и подачу чая /кофе, подносов с завтраком, и газетами для Королевских и домашних целей в эффектной и сдержанной манере; встреча гостей и членов Королевской семьи, приглашенных погостить с королевской семьей; поддержание одежды и униформы на наивысшем уровне; обязанности почтальона, обеспечение своевременной доставки всей почты, посылок, официальных донесений и депеш Членам Королевской Семьи, и служащим». 19 сентября был окончательный срок для подачи резюме на эту вакансию.

Кристофер Эли, бывший Королевский ливрейный лакей, процитированный в TheTelegraph, комментирует свою жизнь на службе.

Недавно, обозреватель путешествий на CNN.com назвал семь гостиниц класса люкс, где знаменитости могут отдыхать, не опасаясь атак папарацци. Не спорим с выбранными гостиницами, но существуют сотни других, предлагающим тот же уровень сервиса и приватности.

Понятие «High tea» и полуденный чай

 

Теперь, когда у нас есть все необходимое оборудование, и мы знаем, как приготовить хороший чай, нам нужно спланировать наш полуденный чай. В связи с частым посещением гостиниц, я много раз наблюдал, как подают дневной чай, и каждый раз его подавали как high tea. Несколько поваров, с которыми я работал в последнее время, так любили этот термин, что мне было сложно отговорить их от того, чтобы они не называли так полуденный чай.

High tea подают за обеденным столом, и, буквально, из-за высокого стола, появилось это название. Также его называют «мясной чай», или ранний ужин. Традиционно он был у рабочего класса, и должен был включать в себя множество мясных блюд, которые подавали с ножом и вилкой. Понятно, что канапе не отвечают этим требованиям!

Low tea – это чай, «изобретенный» Анной, 7-й Герцогиней Бедфорда, чтобы облегчить  чувство голода, которое она испытывала днем между обедом и модным поздним ужином. Обычно его подавали ей в будуар, и именно его мы знаем как дневной чай, и то, из-за чего он называется «low tea», – обычно он подается на низком кофейном столике.

Понятно, что неудобно есть любую еду с использованием ножа и вилки на низком столике. Поэтому еда, подаваемая за Low tea, –  это либо еда, которую можно есть руками, либо с использованием вилок для пирожных.

Чай со сливками – это основной чай, его подают с пшеничными лепешками, вареньем  и сливками – традиционно взбитыми Девонширскими сливками.

В Легком чае (Light tea) к чаю со сливками с его лепешками, вареньем и сливками, добавляется печенье.

Полный чай (Full tea) включает в себя все ингредиенты легкого чая, но добавляет в меню закуску.

 

Блюда. Так же как на обед блюда подаются по очереди, так и блюда к чаю можно подавать по очереди, начиная с закусок, и заканчивая десертом.

К обеденному чаю можно подать разные сорта чая, поскольку здесь нет правил, но помните, что не все оценят вяжущий вкус зеленого чая. Конечно, гостям можно предложить чай на выбор, и нет причин, по которым вы должны подавать один и тот же чай с каждым блюдом. В действительности, гораздо лучше подавать к каждому блюду отдельный, сочетающийся с этим блюдом сорт чая.

Легкий дневной чай, такой как Darjeeling, хорошо сочетается с огуречными сэндвичами, но он может быть подавлен мясными блюдами, подаваемыми во время Нigh tea. Для этих блюд лучше выбрать Earl Grey, Lapsang Souchong или чай Kenya.

И еще несколько советов

 

Планируйте и начинайте ваши приготовления заранее. Чай должен быть расслабляющим мероприятием, и если гости заметят, что вы торопитесь, это почти наверняка испортит им вечер. Убедитесь, что на кухне нет поводов для спешки в последний момент!

Возможно, из-за того, что дневной чай был придуман Герцогиней Бедфорд, предполагается, что это социальное мероприятие в первую очередь для дам. Это означает, что если чай или кофе после обеда являются достаточно формальными мероприятиями, то для дневного чая будет уместно декорирование цветами и мягкими пастельными тонами. Подойдут элегантные вышитые салфетки, и ни один чайный стол не будет полным без прекрасно составленной композиции с цветами.

Независимо от того, мужчина это или женщина, дворецкий всегда должен спрашивать позволения хозяйки дома перед тем, как наливать чай. Помните, что в действительности это ее обязанность, и вы не должны брать это на себя, подавать чай без ее разрешения. И последнее, прислуживать за низким столом может быть проблемой – позаботьтесь о том, чтобы не столкнуться с кем-нибудь и всегда сгибайте колени, разливая чай, чтобы нечаянно не оказаться к гостям спиной.

Помогите, если нужно передать чашки и тарелки, подайте гостям все, что им нужно и убедитесь, что у всех есть вилки и салфетки. Затем удалитесь на кухню с обоими чайниками, чтобы приготовиться к подаче следующего блюда.

 

Шампанскоеанглийский продукт

Как сильно могут удивиться французы (и особенно те, верят мифу, что Дом Периньон, – человек, который создал пузырьки в бутылке, и считается единственным создателем шампанского), –  если узнают, что за тридцать лет до того, как французы создали свое первое игристое вино, и за семьдесят лет до того, как был основан первый Дом Шампанского в Шампани, – англичане уже производили игристые вина.

 

Как это произошло?

Британцы изобрели толстое стекло, которое позволяло происходить вторичным процессам ферментации, и бутылка при этом не взрывалась. Кристофер Меррит написал письмо в Королевское Общество, озаглавленное Заказ вина, в котором шла речь об изготовлении игристого вина английскими бондарями как об обычной практике.

Пока они занимались этим, согласно письменным подтверждениям, Дом Периньон был занят тем, что пытался остановить процессы ферментации вина в бутылке. То, что французы усовершенствовали процесс создания шампанского, является правдой, и мы это признаем, но без британцев, известных своим чаем, а не вином (даже, несмотря на то, что они выращивали его со времен Римской империи), общая идея игристых вин не была бы возможной

 

Вешалки & вешалки

Стандартные вешалки – это 16 – 18 дюймов в ширину. Их высота может варьироваться от 11 до 7 дюймов, если мерить от верхушки крючка до их «основания». Пластиковые и деревянные вешалки могут быть плоскими или контурными, с тем, чтобы повторить линию плечо – затылок – другое плечо. Контурные вешалки очень часто бывают обиты войлоком, что значит, концы будут шире, для лучшей поддержки пиджака или куртки, или другого предмета одежды, для которого вешалка предназначена.

Простая вешалка употребляется для всех тех вещей, которые мы носим на верхней части туловища, например, рубашки, блузки, жилеты, пальто, куртки, купальные халаты и платья. Есть два типа вешалок с зажимами: одни снабжены длинными зажимными планками, другие  короткими; первые предназначены для юбок, вторые для брюк. Эти разные типы вешалок как правило производят с нескользящими зажимами, они сделаны из вельвета, резины, или пластика, для того чтобы предотвратить соскальзывание и падение одежды с вешалки.

Костюмные вешалки – это лучший выбор для всех видов гардероба, поскольку возможность использовать низ и верх на одной вешалке означает, что вы лучше используете пространство в шкафу. Кроме того, удобнее иметь костюм (пиджак и брюки) на одной вешалке, чем держать их на разных.

Другой вид вешалок предназначен для того, чтобы повесить несколько пар брюк одновременно, или несколько галстуков (или других подобных аксессуаров), или даже ботинки, хотя последний вариант может быть не самым лучшим вариантом для хранения обуви, поэтому будьте внимательны, выбирая разные специальные вешалки.

We wish you a happy holiday season and a very successful year ahead. Here is a wee and early card, taken last season at a gingerbread house competition: If such a creation can be made of gingerbread by some enterprising young person, then all things are possible!

I don’t know what the problem was with the good answer provided by Lisa Krohn [story featured in the last MBJ], but it sounds like she sailed into an impossible situation between the devil and the deep blue sea. The first red flag was the alias and arguably second, it did not occur to me the name might have been mispronounced. It wasn’t. Even if the job had been on the level, how long would it last? If you teach the housekeeper to smile and twinkle her eyes: mission accomplished. If you don’t: you’ve failed, which takes us to the chauffeur. Make him punctual: you’ve done your work. Now: what is to become of you? Were there other tasks Mr. Alias Blowpipe wanted done? It sounds like a good case of trying to obtain free advice or just having fun at someone else’s expense. Honestly, if you had a driver who couldn’t be persuaded over a period of years to be on time, there are many other people out there. The harsh and sad truth is that no one is irreplaceable. It doesn’t mean they’re better, but a punctual chauffeur and cheerful housekeeper are small things to ask and easily obtained. Most people won’t steal the jewelry, either. I am sorry that Ms. Krohn went on that interview for nothing. It sounds as if she dodged a bullet, just the same. What kind of mentality would speak that way to someone who was sincerely trying to help? If you had been offered the job and if it were a sincere offer and not just looking for free advice, you would have my pity having to work for such a pompous windbag. ‘Wrong answer!’, indeed. He didn’t furnish the right answer. Maybe he had it in mind, although it is doubtful it would have been correct. You’re better off working for someone who is not used to throwing his weight against those who did nothing to deserve it. It might also explain why they are not satisfied with the servants they already have working. Maybe no one else will put up with the mind games. I daresay that secretary who laughed could explain at least part of this question were she willing. Robert

I have so enjoyed my association with Modern Butlers—I am an Interior Designer who has tried to utilize the principles in your books and web site in my practice to help people realize how to create environments that make life a pleasure. I have realized through my experience and education that a well-spent life is as much an art as anything else. Sad to say that society has lost much of the art of living, as the sweet experiences available through a cultured life seem to be slipping out of favor. I know you have written at length on disrespectful guests—among other properties, I manage a lovely waterfront home (vacation rental). The guests assumed I came with the house and were furious when I couldn’t be reached on a weekend evening. I told them: 1) I was working in a cell blackout-area; 2) I do what I can when I can, but I’m not on call as I just prepare the house. They insisted I had received the calls and that I was ignoring them. From then on, their ‘expectations’ rose. Suddenly the house they loved did not meet any of their expectations. This is sounding much like your examples isn’t it? Anyway, the upshot is I felt I could not adequately defend myself (not wanting to fight with them) when they got personal and I felt, well, inadequate. Nothing I said made any difference and they wanted a deep discount (of course). So my question is, are there ways to protect oneself that foster a professional distance? JPS

Editor: I am sorry you had such an experience, but perhaps the benefit is that it serves to highlight the majority of the guests who do not behave quite so. Yes, there is something you can do to protect yourself while still maintaining a professional distance: know what you know.

And what is that? That guests do exist whose address is Hell and there won’t be anything you can do within your resources to change them. Know that the problem is not yourself, but them. When you decided “I felt, well, inadequate,” you demonstrated your only inadequacy: falling for their venom and thinking you were at fault/inadequate. Knowledge is power, as the adage goes, and if you simply say to yourself, “I wonder what inanity they are going to spring on me today?” and when they do so, admiring what a terrific inanity it is, you will find yourself maintaining your humour, and good humour. You will be secure in the knowledge that your guests live in hell, and they are simply inviting you to join them.

There is no substitute, too, for loving your “enemies,” and in fact, not regarding them as enemies so much as former friends who have lost their way. This sort of compassion will put you in a good position to kill (their evil) with kindness. Your understanding influences your attitude which influences how they perceive you as well as what you say and do, and they all lead to a first-rate managing of whatever issues the guests throw your way—which you will manage with a smile.

Of course, you always have the option to terminate any contract after documenting all the egregious behaviour, and returning monies as needed: you don’t have to play the game if you don’t want to—the days of slavery and servitude are long gone. Does this help?

Thank you for your well considered response. I have meditated on knowing and compassion—you have offered a very useful and interesting approach to this problem. Knowing has also given me some thoughts on rewriting some of the household policies so that there is less room to take advantage—a way of giving guidelines to people who lack boundaries. Thank you, you are very generous. Butlers in the Media

An interesting tongue-in-cheek idea recently put forward in the UK Telegraph was that airline baggage prices have climbed so high, it would be cheaper to have the butler fly as a second passenger with one’s second bag. Of course, anyone employing a butler would either be flying in their own private jet, or first class, but the writer does have a point.

More uses of the word butler to convey superior service or products: the fireplace butler; the handbag butler (which allows a lady to hang her handbag from a restaurant table, rather than place it on the floor); and the (Internet) search butler.

Some positive reviews and write-ups of butler service in a Vietnamese hotel and in private service in the UK and estate management in the US.

This last piece of news is worrisome: the “bullying” and subsequent court action for recompense by one of Prince Charles’ butlers. The individual in question refused duty (to work in a London residence) because he had “phobic anxiety depersonalisation syndrome,” meaning he would have panic attacks if based in a large city. This refusal led to frustration on the part of his seniors (not the Prince), who then harassed the butler verbally, and thereafter his position was scrapped and he was offered a compensation package. Instead, he took his employer to court, who settled out of court rather than be involved with a court case and the inevitable negative press.

Why is this worrisome? Because the butler involved seemed to be doing well, hit a mental block, experienced some negative comments from his seniors, lost his position, and then went against the ethos of the profession by suing his employer, causing anguish in turn, and then setting himself up as a trainer in the profession despite such a blot on his record and violation of his own integrity. It is worrisome because his seniors did not know how to resolve this mental block, and resorted to force that, as it always does, backfired. It is worrisome because it is one more instance of our profession being dysfunctional, when we really are meant to live as, and portray, the most accomplished of service providers—and most of us do—but are tarred with the same brush every time a member of the profession messes up.

How could this lose-lose have been avoided in the first place? By knowing and understanding the mind, and being able to fix it when it acts up. Labeling something (i.e. phobic anxiety depersonalisation syndrome) is not fixing it, and obviously, his mental block was not fixed, and so here we are. A number of simple actions could have been taken by anyone who understands how the human mind works; that would have resolved this young man’s dilemma and he would be continuing to build his career, serving his appreciative employers and backing up his seniors.

Take a Breath! – 10 Common Sense Success Strategies for 2013 & Beyond

Can it really be December already? I’m serious. If you share this view that time is flying, I hope that you will use some of the following ideas to make 2013 move a tad slower!  I believe they not only apply to Personal Assistants, but to everyone in private service and in the workplace at large.

  1. S l o w it down. Don’t permit 24/7 access 100% of the time. (Just because it’s possible, doesn’t mean it has to be.) To be your best, you need sleep and you need to take vacations. Despite current rumors to the contrary, the world will not end if you go on vacation. Make and keep doctor’s appointments to stay healthy and sharp. Burn-out is a real risk factor in private service and we need to be smart about it. Create reasonable boundaries with your employer, co-workers, and family to protect your health and your energy.
  2. Keep it personal. Make a personal connection by picking up the phone and actually speaking to another person. Don’t rely too heavily on email and texting.
  3. Back to basics. Remember the immense power of saying “please,” “thank you,” and sending a handwritten thank you note. More than ever, these things will make you stand out from the rest.
  4. Want a raise or promotion? Be generous with help or information, even when no one is watching.  They are. Volunteer to work on a project, even if it is outside your job description. The word gets around. People notice when you go above and beyond with a smile and by rolling up your sleeves, especially you don’t have to.
  5. Positive breeds positive and negativity is infectious like a virus. This applies to your can-do attitude, demeanor, and actions. Vow to ban negativity and toxic people in 2013.
  6. Commit to perfect spelling, grammar, and using upper/lower case in all your writing. This speaks volumes about your professionalism.
  7. Strive to not take offense easily. 9 times out of 10, it’s about them, not you. Don’t waste valuable time stewing. Give it a day and chances are, the issue will have been resolved. If not, speak up and address it yourself. Don’t allow elephants in the room.
  8. Show respect and expect respect – to everyone. No exceptions.
  9. Lifelong learning is the way to go. Commit to learning something new at least once a week. This makes you marketable and open to what’s coming next.
  10. Keep your perspective. Look around.  Would you really trade places with anyone?

This week I went to hear a presentation by the author Marianne Williamson.  I shall conclude with this quote from her new book, The Divine Law of Compensation: “Nothing binds you except your thoughts, nothing limits you except your fear, and nothing controls you except your beliefs.

Whatever your role is in Private Service, I have the deepest respect and regard for what you do. I wish you all a smooth-as-silk holiday season and a fantastic 2013!

Placement

A quick note note about placement opportunities, but especially the job of retaining those one places—something of interest to applicants, butlers and household managers, placement agencies, and employers. A recent article relayed the top four reasons people leave their positions. When 19,000 people were asked why they were leaving their position, they said, reportedly: Limited career/promotion opportunities; Supervisor (or employer) lacked/respect support;  Compensation (lack of); and Job duties boring/no challenge.

The article covers good solutions that will be of use to butlers and household managers. But what is missed in the article and the survey it is based upon is the most obvious reason one runs into more often than one would like when staff leave, even though their usual reasons may well sound plausible: that they are finding outside reasons to justify their own job performance or lack thereof. When someone leaves a position with a bad taste in their (and everyone else’s mouth), it is often because they have failed in that position and have done things of which they are not proud. And so, while wrongly ascribing their failures to everyone else, they have become disaffected with the position and now want to leave as the “solution”.

One key solution to this issue is to ensure that each person being brought on board is shown carefully what to do, how to do it, and then allowed to do their job without micromanagement, but with correction when in error and validation when done well. Most people do not willfully mess up, but when they don’t know what to do, or are under stress from other areas in their life—so making their attention span short on the job—and these are not resolved, they slip down a slope that always results in recriminations and otherwise unexplained turnover.

Seasoning the Humidor, Part 2 

There are many different schools of thought when it comes to seasoning a humidor and some people are really critical of those who follow a method other than their own. Instead, I will offer some options and let you make up your own mind. If there is a large, valuable stock of cigars involved, please do some more reading or consult an expert.

First Method: Wipe down the cedar lining with a lint-free cloth or sponge lightly dampened with distilled water. This method allows you to season a humidor in 2-3 days. However, if you over-do it, indelible watermarks will form on the interior of the humidor. In warm weather, over-wetting can also cause fungus to grow on the wood. To kill the spores and prevent fungal growth recurring in the cigars later on, you will have to dry out the humidor and wipe it down with isopropyl alcohol before starting over. This will definitely mark the cedar wood lining, but the only other option is to throw away the humidor.

One school of thought holds that it is alright to use tap water for the wipe-down. Apparently the chlorine in the tap water will prevent fungal growth and then escape through off-gassing before it can taint the cigars (remember, we have not stocked the humidor yet.) I have not tried this, but whatever you decide, never spill water into the humidor. After the wipe-down, we proceed as for method 2.

Second Method: My preferred method is to skip the wipe-down and place a damp sponge on a saucer in the humidor. If you are certain no one will bump it, you can simply place a shallow container of distilled water in the humidor—the larger the water’s surface area, the better. Charge the humidifying element as per the manufacturer’s instructions so that it can help the process. Close the humidor for 24 hours and then note the hygrometer reading. Add water to the sponge or dish and recharge the humidifying element daily. This process should take about 5—7 days, but precludes the risks of over-wetting and wild swings in the hygrometer reading.

I only resort to a wipe-down if I cannot otherwise raise the humidity levels sufficiently after a week. It stands to reason that if you need a wipe-down to increase the humidity high enough in the first place, it may make more sense to figure out why the humidor is not holding humidity. I always check for poor placement, a faulty seal, an inaccurate hygrometer, or a humidifying element that is not large enough. On one occasion, I employed a hybrid method in which I wiped down the inside bottom and lower halves of the sides with distilled water, avoiding the risk of marking the cedar lining in highly visible areas of the humidor. A few days later, I was able to stock the humidor, but I always felt that it would have been better to add a second humidifying element.

I apologise to those readers frustrated with me for not saying what the ideal reading is. We do not have the space this month to go into detail, and while there is a simple answer, I am hesitant to state it as it is almost always challenged. So please bear with me until next month, when we will look at ideal humidity levels. I will provide a table showing how humidity levels correspond to temperature, and cover some of the other hazards to look out for when maintaining a humidor.

Let’s Talk about Wine, Part X

Today we travel to Eastern Europe, to the country of Hungary.

Although it is not as famous as other wine countries in the world, Hungary has produced very fine wines since Roman times, cultivating mostly the autochthon white grapes. But history (what with the different invasions, wars, treaties, and phylloxera epidemics the country has experienced over the centuries) led the Hungarians to introduce varietals from abroad that were more to the taste of their contemporary leaders, as well as more resistive to grape diseases. The excellence of Hungarian wines diminished during World War II and the subsequent Communist Era, but modern times have allowed them to regain their past celebrity, and today they again earn prizes and recognition in international competitions.

Tokaj, in Northeast Hungary, holds the honor of being the first vineyard to classify (in 1730), anticipating the trend that would spread thereafter over all wine-producing countries in the world. This original vineyard classification was based on three points: aspect of the plant, soil quality, and the propensity to Noble Rot, a benevolent fungus (known as Botrytis Cinerea in the scientific world) affecting white grapes, which is necessary to produce particularly fine and concentrated sweet wines. This fungus dehydrates the grape berries, thus concentrating the sugars and conveying a particular honeysuckle aroma to the wine.

Today, Hungarian wines are classified by just two categories: regular wines fall under the Protected Geographic Indication; the finest wines are  produced in any of the 22 Quality Wines Produced in a Determined Region (QWPDR), each of them being composed of many sub-regions. Around one fourth of the land in Hungary is devoted to the raising of vineyards and the production of all sorts of wines, the most famous being Tokaj (also known as Tokai and Tokaji) and Egri Bikavér (Bull’s Blood).

Tokaj is a world-famous sweet wine that gets its name from the village where it is produced with Noble Rot grapes. So important is Tokaj to the Hungarians that it is actually cited in the national anthem as the song gives thanks to God (Tokaj szőlővesszein nektárt csepegtettél, which translates as: In the vineyards of Tokaj you dripped sweet nectar). In fact, Eszencia, one of the most famous Tokaj wines, is also known as “Nectar,” as it is the sweetest of the sweet wines worldwide. Served cold, this wine matches very well with very sweet desserts and its contrast with blue cheeses is delightful.

Bull’s Blood (the name comes from that supposedly secret ingredient in the wine that fortified the Defenders of Eger—who finally beat the Ottoman invaders after many defeats, in the middle of the Sixteenth century) is a red wine made of a blend of grapes, with Kadarka being the main one. Nowadays, the best Bull’s Blood is kept for two or three years in oak barrels and, when served at 16-18oC/61-64oF, complements very well game, beef, spicy food and roast duck.

Hungary also produces a really nice sparkling wine called Pezsgő, developed by French producers since the nineteenth century, with both international and local varietals.

So, as this great year comes to an end and we face an even better one ahead, raise your glass of fizzy and let the bubbles tickle your palate with best wishes… Egészségére! (To your health!).
